Sunlight on the asparagus will begin the photosynthesis which will give the hues of green, and partly purple to the shoot. Making rows of elevated soil, keeps the harvest protected from the sun rays, and once grown, the shoots are cut while in the ground, giving white asparagus.
The white asparagus, a common delicacy around this time in Germany, and other European countries, is a very different experience to the palate than that of the natural green one.
