Eating is a state of mind. Directly and indirectly, that is where all begins. How we eat, and why we eat, goes beyond scientific nutritional values.

One day I spent hours cooking the shoulder of a goat. After the long process, I enjoyed it in a risotto. The next day, though, called for a different, milder taste.

Balance.

Baby red amaranth, Swiss chard, Shiso, and cherry tomatoes.
